NIMA Partners has teamed up with Kelly's Choice to provide nutrition counseling services to an underserved population within the Celiac community. 

Kelly’s Choice is a nutritional consulting company headed by registered dietitian, Kelly Springer MS, RD, CDN. Founded in 2012, the company’s mission is to empower individuals to invest in themselves and their overall wellness in pursuit of living their best lives.

Kelly’s Choice now functions as a comprehensive nutrition and health company that offers private nutrition counseling, workplace wellness, educational webinars, media appearances, and brand partnerships. The company has grown exponentially since its inception, and is headed in an exciting direction to reach a wider audience and change the conversation surrounding what it truly means to be healthy.

Meet Kelly Springer

A business owner, registered dietitian, nutrition expert, Kelly Springer, MS.RD.CDN, is on a mission to educate the world and strives to improve the lives of others. In 2012, Kelly started her own business Kelly’s Choice, and is passionate about educating the public and promoting their tagline “real people, real food.”

Kelly received her BS degree in Nutrition from West Virginia University and went on the earn her master’s degree in health education from SUNY Cortland. Recognized for her outstanding achievements, she has been nominated for the Entrepreneur of the Year award. Furthermore, Kelly won a Telly award for her exceptional work as a spokesperson for Apples of New York. Her expertise and insights have also gained national recognition, with appearances on esteemed platforms such as Good Morning America and features in reputable national publications like Forbes, Newsmax, Women’s Health, and HuffPost. These awards are a testament to Kelly’s remarkable accomplishments and her significant impact in the industry.

Our Registered Dietitian will work directly with the client and provide them with individualized nutrition education to help them reach their health and wellness goals. We will provide advice on what foods to incorporate into one's diet and what foods to avoid, specifically gluten free products. We make it a fun and educational experience.

Olivia Mancabelli

Olivia received her bachelor's from SUNY Geneseo in Psychology and Human Development. She received her master's degree in nutrition science from Syracuse University. She also completed her dietetic internship at Syracuse University as of May 2023. Her dietetics experience includes community nutrition and education for women and children, having worked at WIC as a nutrition assistant in Syracuse. She also has a background in psychology and human development and understands how much one's environment, upbringing, and lifestyle can impact current food behaviors and patterns. Olivia believes in an individualized, patient-centered approach to nutrition care and meeting the client where they are at!

Kathryn Spychalski

Kathryn is a graduate of SUNY Buffalo State College with a BS degree in Dietetics. She has experience as a Registered Dietitian in both long-term care and acute care settings. Most notably, Kathryn recently worked as the interim Transplant Dietitian at ECMC’s Regional Center of Excellence for Transplantation and Kidney Care, gaining invaluable knowledge and skills regarding transplant and renal nutrition. Originally from the Finger Lakes, Kathryn has been in Buffalo for the past 8 years. She is currently working towards her master's degree in Multidisciplinary Studies with a Nutrition Track at SUNY Buffalo State College. She is passionate about using nutrition as a way to improve overall quality of life. Dealing with some of her own health issues, Kathryn is interested in fertility nutrition and gut health.

Shari Keats

Shari Keats- Shari Keats is a Registered Dietitian Nutritionist based in Westchester County with an expertise in celiac disease, the gluten-free diet, and other digestive disorders such as IBS and low FODMAP diet. She received her MS in Nutrition Education from Teachers College, Columbia University. Through her master’s coursework and dietetic internship, she trained at the Celiac Disease Center at Columbia University Medical Center. She has a Certificate of Training in Gluten Related Disorders from the Academy of Nutrition and Dietetics and completed the Monash University ‘Low FODMAP Diet for IBS’ online training course for health professionals. In addition to specializing in celiac disease and digestive health, Shari provides nutrition counseling in other areas including diabetes, cardiovascular disease, and cancer nutrition as part of previous positions in acute and long-term care. Shari helps clients navigate through their food and nutrition concerns with compassion and determination. She prioritizes their needs and concerns and works with them to develop strategies for living a healthy, nutritious, and happy life.
